These carbon steel pans have gone through a proprietary heating and quenching process that has added a natural black or carbon coloration. This forced patina simplifies the break-in process by giving the pan even coloration on all surfaces. This significantly helps build toward the naturally non-stick surface you desire in this type of cookware.
