The Crostate line by Pavoni, designed in cooperation with Chef Gianluca Fusto, is a selection of stainless steel ring molds that have the added benefit micro perforations. The addition of small holes in the side of the ring allow dough to cling to the frame and help prevent the collapse of the shell wall during the baking process. Additionally there is moisture release from the crust allowing for a more even cooking and browning.
